Young leaves from plants that are not yet blooming are used to make salads with cream, mayonnaise and other sauces.

annual or biennial plant originating in Italy, with a spindle-shaped root, it is cultivated almost all over Europe. The taste of salsify is similar to that of parsley, but more delicate. The roots are eaten as vegetables.
