Winter endive

Winter endiveWinter endive. It is a leaf vegetable that is grown much like lettuce, i.e.. it can be sown into the ground or grown from seedlings. In addition to cultivation treatments, like lettuce, bleaching is necessary. It consists in keeping the inner leaves dark. This is achieved by tying the outer leaves with raffia or with a string, two weeks before harvest, in awa- for sunny weather, because the leaves must be dry (Lynx. II.23). The leaves turn yellow in the dark, they lose their bitterness and are delicate in taste, and the green exterior

are inedible. In coastal regions, it can winter in the ground.
